The aim of Harris Fold is to produce quality, well-tempered Highland Cattle with the emphasis on a natural input. They are fed naturally on milk, grass and hay living in harmony with the local fauna. The Highland Cattle enjoy a varied natural diet and their foraging habits are seen to enhance the flavour of the beef. The slow maturing Highland Cattle produce an excellent beef carcass with lean, well-marbled flesh that ensures tenderness and succulence combined with a very distinctive flavour, we finish our steers to around 30 months. Beef from Highland Cattle is healthy and nutritious with lower levels of fat and cholesterol, and a higher protein and iron content than other beef. It lends itself to a range of cooking methods and recipes. We are registered as a Red Tractor member/producer. As we are only a small farm our beef boxes will be available on a pre-order basis and not all the year round. Each beef box will contain a selection of cuts, including roasting joints, sirloin/rump steaks, diced stewing steak, mince and burgers.
